Trained as a pastry cook and worked hotel kitchens for eight years. I opened the bakery in 2004 and added the wholesale accounts later. Now I run the front, the ordering and the café accounts; my head baker runs production.
There's a line out the door on Saturday mornings and half of it is people I've known twenty years. The head baker can run production without me — she proved it when I broke my wrist. I'd stay through a holiday season to hand over the wholesale accounts personally. The name should stay; the neighborhood would riot.
